Chocolate Decadence

Chocolate truffles made by Me

I’m a chocolate lover, and I don’t know if you are aware that unsweetened chocolate it’s a great antioxidant and a super food.
So for all you chocolate lovers here you have a delicious Chocolate Truffles recipe, it’s easy to make and it’s Vegan; most people won’t be able to tell that they are totally vegan, so this is a healthy option that everybody can eat and enjoy!!

What you will need.
3/4 cup raw cashews or pell almonds
3/4 cup cold water
1lb vegan chocolate (dark chocolate no milk)
cocoa powder for coating
Process

Put cashews and cold water in a blender and blend on high speed for 1-2 minutes (I know, a long time)
Scraps the sides of the blender down with a spatula  and blend again until the mixture is the consistency of heavy cream.  (if you want to jazz up this recipe, try stirring in 2 teaspoons of orange or coffee liqueur)
Meanwhile, heat the chocolate in the top of a double boiler until completely melted.
Cool the chocolate until it’s comfortable to work with and fold in the cashew cream (making sure no to stir too fast or you’ll create bubbles)
Cool in the fridge for to hours until set.

Here comes the fun part...

Form small balls, you can use a melon baller or two teaspoons (if you like, you can use your clean hands) roll in cocoa powder and store in the fridge/freezer until completely hardened, like 2 hours more.
Enjoy!!
P.S. If you have any questions leave a comment, and I will be happy to answer.

Aquí viene la parte divertida;
