International Women's Day


Today we celebrate the International women’s day, we celebrate the Mother Nature, all the beauty, love, harmony, balance, intuition, and the life we bring to the world. 
It’s also a day for men to celebrate all women in their life, mother, grandmother sister, wife, girlfriend, friends, etc...
Personally I want to thank all the amazing women who have had a great impact in my life, and have helped me to be the woman that I am.... My mother for her advice, wisdom constructive criticism and unconditional love, which have been the foundation of my existence, and have helped me become the loving woman that I am.
Also to my wonderful sister for always being with me, and to my best friends.
Let’s make everyday a women’s day...

Hoy celebramos el día Internacional de la Mujer, celebramos a la Madre Naturaleza, la belleza, el Amor, la armonía, el balance, la intuición, feminidad, y la vida que traemos al mundo.
Es también un día en que los hombres pueden celebrar a todas las mujeres en su vida; a su madre, abuela, hermana, esposa, novia, amiga, colegas, etc... 


En lo personal quiero agradecer a las grandes mujeres que han tenido un gran impacto en mi vida y han contribuido a que sea la mujer que soy... A mi madre por sus consejos, sabiduría, sus críticas constructivas y su amor incondicional, que han sido parte fundamental de mi existencia, y me han ayudado a ser la mujer amorosa que soy.

KONY 2012


KONY 2012 is a film and campaign to raise awareness by “Invisible Children” that aims to make Ugandan warlord Joseph Kony famous, not to celebrate him but to raise support for his arrest and set a precedent for international justice. Joseph Kony is the leader of a rebel group, LRA (the Lord’s Resistance Army), the LRA is said to have abducted more than 30,000 children and forced them as soldiers and sex slaves. It’s impossible to imagine that this has been happening for the last 26 years, and that nobody has been able to stop it.
I have to acknowledge that I have read that the organization “Invisible Children” has been criticized, but independently on how the organization is managed, I think that this information has to be shared to bring awareness into the world and this criminal has to be stopped.

KONY 2012 es un pequeño documental de 30 minutos y campaña de sensibilización creada por “Invisible Children” que pretende dar a conocer la situación de Uganda. Pretende hacer famoso al rebelde Joseph Kony, no para celebrarlo sino para aumentar el apoyo para lograr su arrestro y sentar un precedente para la justicia internacional. Joseph Kony es el líder del grupo rebelde LRA (the Lord’s Resistance Army/ Ejército de Resistencia del Señor) La LRA ha secuestrado a mas de 30,000 niños y los ha forzado a convertirse en soldados, y los ha hecho esclavos sexuales. Es imposible imaginar que esto haya estado sucediendo por los últimos 26 años y nadie ha sido capaz de detenerlo.
Tengo que reconocer que he leído críticas hacia la organización “Invisible Children” pero independientemente de como la organización esté siendo manejada, creo firmemente que esta información tiene que difundirse para crear consciencia en el mundo sobre está situación que vive Uganda, y detener a este criminal.

Midnight in Paris



Looking at my pictures trying to find some inspiration, I saw my pictures from Paris, and in an instant I was transported there, kind of my own Midnight in Paris...
I’m the kind of person that doesn’t like to live in the past, I’m the present type of person, but when you remember something that brings you good memories, you can enjoy them and relate them to what you are living right now, and be grateful for every experience.
Lately I have been more into a healthy living, mentally and physically. I have always been a pretty healthy person but now I doing it more consciously. I’m watching what I’m eating, not in a way that I’m counting calories, but in a way that I’m more conscious about the impact that the food that I have has in me, in the environment, and especially in other beings, also  practicing meditation and working out.
I know that this has nothing to do with my own midnight in Paris, but seeing that pictures and looking at that moments, made me think about the things and decisions that have stamped my life.

Viendo mis fotografías buscando un poco de inspiración, me encontré mis fotos de Paris, y en un instante me transporté ahí, al estilo de mi propia Media noche en Paris...
Soy el tipo de persona que no le gusta vivir en el pasado; me gusta vivir mi presente, pero cuando recuerdas algo que te trae buenas memorias, las puedes disfrutar y relacionarlas con lo que estas viviendo en este momento y agradecer por cada experiencia.
Ultimamente he estado enfocada en llevar una vida sana; mental y físicamente. Siempre he sido una persona bastante saludable, pero ahora lo estoy haciendo de una manera más consciente. Estoy cuidando lo que como, pero no de la manera en la que estoy contando calorías, si no de una manera que soy más consciente del impacto que  la comida que consumo tiene en mi vida, en el medio ambiente y en especial en otros seres; también la práctica de la meditación y el hacer ejercicio.
Se que esto no tiene nada que ver con Paris, pero al ver las fotografías y al recordar esos momento vividos, me hizo pensar en las cosas y decisiones que he tomado que han marcado mi vida.

Lo más maravilloso sobre los pingüinos es que cuando un pingüino encuentra a su pareja, a la mejor pareja, estarán juntos toda su vida.
Es hermoso saber que en la naturaleza el amor puede ser para siempre, y en nuestras vidas también.
Hay que recordar que no es necesario que sea el día de San Valentín para celebrar el amor...

Tangerine Cake

After receiving some emails asking for more recipes, I decided to share with you this delicious tangerine cake recipe...

Después de recibir varios mails pidiéndome que compartiera más recetas en el blog, decidí compartiles esta rica receta...



In the Oven.... 



Needed:
2 1/2 cups flour, (I used whole wheat flour, but you can use regular or even almond flour)
1 1/2 cups brown sugar
2 teaspoons baking soda
1/2 teaspoon salt
2 cups tangerine juice
2/3 cup sunflower oil
1/2 teaspoon orange extract
2 tablespoons vinegar
In a bowl whisk together the dry ingredients. In another bowl mix together the wet ingredients. Combine these and stir just until no lumps are left. Pour the batter into a cake pan and bake at 350° F for 30 minutes. 
If you like you can add a handful of chopped walnuts and 2 cups of  ground carrots.

(Note: this cake recipe is vegan friendly!)

Necesitas:
2 1/2 tazas de harina, (yo use harina integral, pero pueden usar harina de almendra o regular)
1 1/2 tazas de azúcar moscabado
2 cucharitas de bicarbonato de sodio
1/2 cucharadita de sal
2 tazas de jugo de mandarina 
2/3 taza de aceite de girasol
1/2 cucharadita de extracto de naranja
2 cucharadas de vinagre
En un bowl mezcla todos los ingredientes secos. En otro bowl mezcla los ingredientes húmedos. Combínalos y mezcla hasta que todo quede integrado y no tenga grumos. Vierte la masa en un molde de pastel y hornea por 30 minutos a 175 ° C
Si deseas le puedes agregar un puño de nueces y 2 tazas de zanahoria rallada
(Nota: Esta receta es vegana!)

Baked Carrots Fries

I just love guilt free food and I think that  this recipe of “Baked Carrot French Fries” are the perfect option  and substitute for the typical “French Fries”. So when I came across to this delicious and healthy recipe on “Elena’s Pantry” I just wanted to share it, because they are so easy to make and you don’t need to fry anything....

You need....
6 large carrots
2 tablespoons of olive oil
½ teaspoon sea salt

1. Cut each carrot into 2-inch long sections
2. Cut each section into thin sticks
3. In a large bowl toss carrot sticks with olive oil and salt
4. Spread out carrot sticks on a parchment paper Baking sheet
5. Bake at 425° for 18-22 minutes until carrots are browned

Me encanta la comida “libre de culpa” y creo que esta receta de “Zanahorias a la Francesa Horneadas” son la perfecta opción y substituto para las típicas “Papas a la Francesa”. Así que cuando me encontré esta sana y deliciosa receta en “Elena’s Pantry” quise compartirla con ustedes, porque es muy fácil de hacer y no tienes que “freír” nada...
Necesitas....
6 zanahorias grandes

2 cucharadas de aceite de oliva
½ cucharadita de sal de mar o de grano
1. Corta cada zanahoria en secciones de apróximadamente 5cm de largo
2. Corta cada sección en tiras finas (julianas)
3. En un bowl grande mezcla las zanahoritas con el aceite de oliva y la sal
4. Extiende las zanahorias  sobre papel encerado en una charola para hornear
5. Hornea a 220° C (425° F) durante 18- 22 minutos hasta que las zanahorias se doren o tomen un color café

I came across with this pictures from the January issue of Elle Brazil and I loved this Editorial featuring Martha Streck, all the sparkling and vibrant colors makes me feel that the spring is just around the corner, at least in Arizona already feels almost like srping :) 


Me entontré estas fotos de la edición de Enero de Elle Brazil y me encantó esta editorial con la modelo Martha Streck, todos esos colores vibrantes me hacen sentir que la primavera está a la vuelta de la esquina, aunque podríamos decir que aquí en Arizona, el clima se siente casi como primavera :)

For the New Years eve I choose a "classic" all black look, we had a very relax but fun night...

Para la noche de año nuevo elegí un look "clasico" toda de negro, pasamos una muy tranquila pero divertida noche...
